Karen In The Kitchen’s Peach Cobbler

In a couple of hours this peach cobbler was devoured, and the dish was licked clean. In fact, the following morning, my mom asked me if I could make some more because my brothers were sad that “disappeared” so quickly. One of my other loves, and passions, is sweets. I have a HUGE sweet tooth! I love cooking, but I love baking even more, because what I make appeases my constant craving for sweets! :)

Last month, I had the lovely opportunity to have dessert with John, and our disciplers, John and Karen. Yup! There are two John’s during our meetings. :) Karen has a cooking blog called “Karen in the Kitchen”! She is a fantastic cook! She used to cook meals sometimes when we would have leadership meetings at her house for the fellowship I was in, and everyone would get so excited to see what she would make! :) Anyways, Karen made a peach cobbler with fresh peaches for us, and it was amazing! So, of course I had to ask for the recipe, which she readily gave me! :)

So a little summer gift from me to you! Here is her wonderful recipe that she gave me permission to share! :D

Karen in the Kitchen’s Peach Cobbler

 

Ingredients
– 8 large peaches (cut into thin wedges)
– 1/4 cup sugar
– 1 tbsp fresh lemon juice
– 1 tsp vanilla extract
– 1/2 tsp cinnamon
– pinch nutmeg
– 1 tsp cornstarch

For Biscuit Topping:
– 1 cup all-purpose flour
– 1/2 cup vanilla sugar (I just used brown sugar, because I didn’t know this existed haha)
– 1 tsp baking powder
– 1/2 tsp salt
– 8 tbsp (1 stick) cold butter, cut into small pieces
– 1/4 cup boiling water

 

Directions
1. Preheat oven to 425 degrees.

2. Toss peaches with sugar, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch in a baking dish. Bake in the middle of the oven for 10 minutes.

3. While peaches are baking, make the topping. Stir together flour, sugar, baking powder, and salt. Blend in the butter with your finger tips, or a pastry blender until the mixture resembles coarse meal. Stir in the water until it’s barely mixed together.

4. Remove the peaches from the oven, and drop spoonfuls of topping over them. The topping will spread as it bakes, but I tried to even it out if I could.

5. Bake it in the midel of the oven until the topping is golden. This usually takes about 20 minutes! :)

6. Serve with some vanilla ice cream & ENJOY! :)
